This multi-purpose flour is small-batch produced, using The Dotted Lime flour blends, in their gluten-free, peanut-free, and peanut-free facility. If you are using this to bread food for sauteeing or frying, do not add any gums because that would be NOT awesome. This blend does NOT contain gums. If you are trying to duplicate a quick bread, you'll want to add about a teaspoon of xanthan gum per 2 cups of flour in your recipe.
